We hand select the very best harvest direct from divers, boats and fishing ports. Our Scottish seafood range comes from the cold, fast flowing, nutritionally rich and fertile seas that surround our rugged Scottish coastline.

All our gourmet seafood is sold net weight!! (net of protective glaze), so you buy seafood not water and our Scottish seafood is free from any artificial E- numbers and poly-phosphates that can affect the taste, texture and natural quality of our great fresh seafood.

Will Selling Highland Bay Seafoods products affect the sale of my Fresh or Chilled seafood sales?
It is our view that there is opportunity for both retail options. Buying Frozen -  Highland Bay Seafoods offers you all year round choice and often a far greater shellfish selection that a typical regional fresh fish supplier. Frozen Highland Bay Seafoods offers superior pack and product specification , lower in-store maintenance, zero product wastage and a greener carbon footprint. Do I require myself or a staff member to be trained in selling seafood?
We offer marketing materials including recipe cards to help you and your staff sell our seafood to your customers. Unlike a wet fish counter there is very little overhead in managing the freezer, you and your staff simply need to make sure the packs are well presented in the freezer and the freezer works efficiently, in other words the air temperature in the freezer is approximately -18 degrees Celsius at all times. Remember we can offer a branded high quality upright display freezer that combines excellent point of sale presentation and low in-store maintenance and running cost.

What information do you require to set-up a retail account?

Can you recommend a freezer unit to have in store?
Yes, we partner with a UK and international refrigeration company that can offer the right freezer to meet your requirement. The benefits are we offer a fully branded Highland Bay freezers to optimise sales performance and full servicing and repairs should you wish to finance the freezer at low monthly costs. What is the optimum number of freezers to begin with?
This will depend on the area available in-store. To offer the full range you would require 2 freezers, however we recommend an average of 8 lines to start with so 1 freezer would suffice. Please make sure you have suitable back up for stock. We can recommend a display freezer solution should you wish it.

I see you have 25 product lines, how many should I stock in my store? 
It depends on the size of your retail outlet, the average tends to be 8 product lines. We recommend you focus on our Scottish shellfish products to start with.

Is there a minimum order size?
For delivery to the UK mainland you must buy a minimum of 2 cases at any one time.Buy 5 or more cases then you benefit from FREE DELIVERY. Buy between 2 and 4 cases the delivery charge is £25.00. How does the pricing structure work?
We supply all our seafood at a price that offers you the retailer a competitive margin on what are high value food items. Highland Bay Seafoods Prices are reviewed every 6 months subject* to reflect seasonal and market condition changes such as weather and spawning cycles plus availability and market demand fluctuations, together with processing and transportation costs. If you wish to buy larger orders in excess of 15 cases per month discounting opportunities may be available. (*we review the right to change prices immediately where large unforeseen costs are incurred)

What if I do not want to use your RRP?
The RRP we offer is a guideline, you can tweak the RRP to meet your in store customer requirements.

What are your payment terms?

For all independent retailers you must pay online by card prior to dispatch of goods. This service is put in place to guarantee the long-term opportunity and development of our retail brand. Due to the nature of our industry we must pay our fishermen within 7 days. If you represent a chain of stores we may offer credit services. Where do you deliver?

When do you deliver?
For UK mainland delivery we currently offer a standard once a week service on Wednesday's. To guarantee delivery on Wednesday please make sure your order is with us no later than Monday 10am (48hrs prior to delivery). Please contact us: This email address is being protected from spambots. You need JavaScript enabled to view it. if Wednesday is not a good day for delivery. We can offer another delivery date should this not be suitable. For international delivery we set up a delivery schedule to meet the requirements of the order and the available freight service.

Who will deliver my order?
For UK mainland we use Thermo Logistics.Their website is www.thermologistics.co.uk. Proof of Deliveries (POD's) are available on receipt of your goods. What is the delivery charge?

The standard delivery charge is FREE, but you must order at least 5 cases at a time to benefit from this offer. If you order between 2 to 4 cases the standard fee is £25.00 to any UK mainland address. For International delivery please enquire at This email address is being protected from spambots. When is your order cut off time?
For UK mainland deliveries the cut off is Monday 10am for delivery to your food hall or delicatessen on Wednesday.

Why do you sell your seafood blast frozen?
Fresh is a powerful descriptive and most chefs and consumers pay a very high price for fresh fish, but how fresh is fresh? and is fresh really superior to frozen?
Seafood begins to deteriorate as soon as it is harvested, but this deterioration can be slowed greatly by good chilling / icing OR completely stabilised by fast professional blast freezing at -30 Celcius or colder. When you consider it typically takes 2-4 days extra time to distribute and sell fresh fish in the UK (that is 2-4 days extra deterioration!!) which frozen at source does not have. Then with fresh fish you factor in some temperature variation, extra handling and drip loss - this is the seafoods' natural moisture  / juiciness leaching out) then you begin to see why we choose to sell frozen!! Experts in primary processing since 1958, we know that using modern fast freezing methods within 12hrs of seafood being landed delivers a quality of product that is consistently superior to so called 'fresh'.

How will my seafood stay frozen in transit?
All our seafood is packed in cardboard cases and are loaded onto temperature controlled transporters that guarantee the frozen delivery of our seafood to your foodhall, farmshop or delicatessen. Will the courier leave my delivery safe if I'm out?
As you are ordering perishable food items to a retail address there must be a member of staff available to sign for collection. 

Do You Have a Shop?
We do not have a shop at present. However you can find our a selection of our great seafood in a growing number of farm shops, food halls and delicatessens through out the country. We will be launching a stockist map shortly.

Our retail outlet is quite close to you, can I collect?

How Can You Help Us Display Our Products In Store?
When you order Highland Bay Seafoods we can help you with the displaying and merchandising of the products. We offer a variety of point of sale promotions material such as recipe cards, promotional boards or branded freezer display cabinets.

How do I maintain the product in store after delivery?
Customers buy with their eyes, our retail range offers strong brand presentation. It is critical for sales that you maintain the products at their best. To do this is straight forward.
1. Products should be lined upright in an orderly fashion. Front of packaging with the product window must be pointing to customer. 
2. You should appoint a dedicated member of your staff to manage the stock in the freezer.
3. The temperature of the freezer should range between -18 degrees Celsius and -20 degrees Celsius at all times
4. If you notice a build up of ice on the products or in the freezer this means the freezer is not working effectively. We recommend a regular defrost routine of your freezer, NOT the products.
5. We recommend you do not overfill you freezer, keep a gap of approximately 15cm between the product and the window.
6. We recommend the freezer you use (chest or upright) has a glass window. This is more environmentally friendly and maintains the products at a consistent temperature. The name of the game is temperature control.
7. Our recommended freezer supplier will supply the necessary in-house training on installation of freezer.

Can I use Highland Bay products in my restaurant or coffee shop?
Yes we recommend this option. This means that you can add great diversity to your restaurant or coffee shop menu. Furthermore it means you double up on the opportunity to sell Highland Bay Seafoods in your store. If you do use our products in this way we recommend you articulate Highland Bay Seafoods in your menu, this offers excellent provenance and will help you increase sales in your food hall.
